Simple Corn Fry

I love corn, any form of corn - roasted, boiled or fried. Ah, I remember those days back in India, when we used to buy these roasted corn on the cob from the street vendors, all nicely rubbed with spiced salt and lemon. I can almost taste that corn just writing about it.

Anyways, today I am sharing a simple healthy snack, made with corn, which I made a couple of days back. The other day my daughter came back home after playing outside and she needed some snack. She is not a very big eater, so when she wanted to eat something, I wanted something quick and healthy for her. She loves corn, so thought of making this quick snack for her. 





You'll need:
---------------
1 cup of frozen corn.
1 tsp vegetable or olive oil.
1/2 tsp mustard seeds.
salt to taste

Steps:
-------
- Add 1/2 cup of water to the corn and cook it on the stovetop or microwave till the corn is tender. Maybe around 2-3 minutes.

-Once the corn is cooked, drain out the water.

-In a pan, heat the oil. Once the oil is hot, put the mustard seeds and let it splutter.

- Then add the cooked corn and sprinkle with salt. Mix it and cook for another 2-3 minutes.

- You can eat it just like that or add a little drizzle of lemon juice and enjoy!

  2. Now this has to be absolutely delish. I will be trying this for sure. Never did I ever think of mustard seeds in corn. I put it in pretty much every thing else.
