Cake in a cup...but not a cupcake



This is not your typical cake, but its good for a quick dessert. Its not as moist as I would have expected the cake to be, but I had to try it once after I read the recipe here.


It was easy to whip up and didn't take long to bake in a microwave. There are some tricks to it though. Don't overcook it, it makes for a dry cake. Also don't overbeat the batter,  it removes the air  from the batter and that will make the cake dry too.



You'll need
--------------
1 cup all-purpose flour, sifted
1 cup granulated sugar
1/2 cup high quality cocoa powder
1 teaspoon baking powder
1 egg
3/4 cup whole milk
3/4 cup vegetable oil
Toppings, like whipped cream, powdered sugar or chocolate sauce
4 large microwave-safe cups

Steps:

1. Combine all ingredients and mix until just combined. Do not over mix.
2. Divide between four mugs. One at a time, microwave on high for 2 1/2-3 minutes, until cake rises above the mug.
3. Let cool for 2 minutes and garnish with desired toppings.

Next time, I will try baking it with some pie filling. That might make it more moist, I think. I can think of chocolate cake with cherry pie filling  which I would like to try.

  3. yours look yummy.. I have made many of these and found if I add 1/2 oz. of very soft creaam cheese to the cake portion of the mixture it makes it moist- like real cake..
