Summer time, when there are variety of fresh fruits available, I love to incorporate them in the dessert. And this individual fruit pizza is so fun to make and serve. In fact when serving the kids, let them decorate their own pizza..:)
You'll need:

For the cookies
1/2 cup confectioners' sugar
1 1/2 cups all-purpose flour
1 1/2 sticks unsalted butter, softened and sliced
Filling:
1 (8-ounce) package cream cheese, softened
1/2 cup granulated sugar
1 teaspoon vanilla extract
Topping:
Fresh strawberries, kiwi slices, blueberries, raspberries
1/2 cup confectioners' sugar

Steps:

For the cookies:
- In a food processor, combine the confectioners' sugar, flour, and butter, and process until the mixture forms a ball.
- With with generous amount of flour on the rolling board, roll the mixture to 1/2" thickness and then cut into cookie shapes.
- Put the cut cookies in the fridge for at least 15 minutes before baking. This way cookies maintain the shapes.
- Heat the oven to 350 degrees F.
- Bake in the preheated oven for 10 to 12 minutes, until very lightly browned. Set aside to cool.
For the topping:
- Beat the cream cheese, sugar, and vanilla together until smooth. Spread the cream cheese frosting over the cooled cookies and top it with the cut fruits of your choice.
For the cookies:
