Rainbow Pancakes - for St. Patrick's Day

I have never done anything different or special for St. Patrick's Day, mainly because I did not know what to do. The kids on the other hand have lots of ideas as to what can be done.
Last year they made a Leprachaun trap.
Today in the morning I had an idea of making rainbow pancakes for breakfast and my kids loved it.


Kids love pancakes for breakfast and to have rainbow pancakes having a twist was a welcome change from the regular. And how appropriate I think to make it for St. Patrick's day.
