Blueberry Cobbler


Posted the recipe of peach cobbler earlier today and thought of posting the recipe I used to make the blueberry cobbler sometime back. The recipe is almost similar to that of peach cobbler and is taken from allrecipes.
This has to be one of the favorite dessert of my kiddos. Blueberries is one of their favorites.




Following is the original recipe. I  just used a little less sugar than the recipe asked for.

You'll need:

2 and 1/2 cups of fresh or frozen blueberries.
1 teaspoon vanilla extract
1/2 lemon juiced
1 cup white sugar ( I used maybe 3/4 cup of sugar)
1/2 teaspoon all purpose flour
1 tablespoon butter melted

1 and 3/4 cups all purpose flour
4 teaspoons baking powder
6 tablespoons white sugar
5 tablespoons butter
1 cup milk
2 teaspoons sugar (optional)
1 pinch ground cinnamon (optional)



Steps:
------
- In a bowl, place the blueberries. Mix the vanilla and lemon juice. Sprinkle with 1 cup sugar and 1/2 teaspoon of flour and stir in the teaspoon of melted butter. Place this mixture in the lightly greased baking dish.



- In a separate bowl, stir together 1 and 3/4 cups of flour, baking powder and 6 tablespoons fo sugar. Rub in the 5 table spoons of butter using your fingers. Make a well in the center and quickly stir in the milk. Mix until just moistened. You should have a very thick batter. You may need to add a splash more milk. 

- Preheat oven to 375 degrees F. Spoon the batter over the blueberries. If you want, you might want to mix together the cinnamon and 2 teaspoons of sugar and sprinkle over the top. (I skipped the sprinkling of the cinnamon sugar on top and still tasted good.)

- Bake for 20 -25 minutes in the preheated oven or until the top is golden brown. A knife inserted into the topping should come out clean, though there might be blueberry syrup in the knife.


You can enjoy just as is or while it is warm serve with a scoop of vanilla icecream.
