Blueberry Cobbler



This is only my third time making this dessert. I followed a different recipe the last two times and it came out great, but found this new recipe and wanted to try this one too. It was wonderful - with crusty top and all the blueberry goodness inside.





You'll need:
  • 6 tablespoons butter, melted
  • 1 1/4 cups Pancake Mix
  • 1/2 cup sugar
  • 2/3 cup milk
  • 3 cups fresh blueberries 
  • 1/2 lemon juiced
  • 2 tablespoons sugar 

  • Steps:
    • Heat oven to 350°F. Pour melted butter into 8 or 9-inch square baking dish. I used ramekin to bake individual servings.
    • In a bowl mix together blueberries,  2 tablespoons sugar and lemon juice and pour the mixture in a prepared baking dish.
    • In medium bowl, whisk together Pancake mix, sugar, and milk; pour over melted butter.
    • Spoon the batter over the blueberries and bake for 42 to 47 minutes, or until golden brown. Serve warm. You can serve it with a scoop of vanilla ice-cream too.
                 You can substitute blueberry with any kind of fruits: Peach, raspberries, apple, etc.
