Soy Chorizo Salad



This is a great salad or can also be eaten with some tortilla chips.Its light and refreshing and instead of this vegetarian version of chorizo, you can even substitute with meat chorizo. 




You'll  need
------------
1 packet soy chorizo - cooked - I got mine from Trader Joe's
1 can corn
1 can black beans
2 avocado - cut in small pieces
1 big tomato - cut in small pieces
1 cup Romain lettuce - shredded
1/2 cup shredded cheese - you can use any kind of cheese you like. We used the mexican blend.

Steps:

Toss all the ingredients together and you got a great salad.
